Shepherd's Pie
1 pound ground beef
1/2 onion diced
1 can vegetable (corn, green beans, or what ever you like)
2 cups instant potato mix (flavored is fine too)
1 package of shredded cheese (cheddar, fiesta mix, Colby/jack, or whatever you like)
1/2 half cup grated Parmesan cheese
1 teaspoon garlic
Oriental Style:
1 teaspoon of Thai seasoning (The Spice Hunter - can be obtained at World Market)
1 teaspoon of Tandoori Blend (The Spice Hunter - can be obtained at World Market)
Southwest Style:
2 teaspoons Emeril's Southwest Seasoning
Your Style:
2 teaspoons of your favorite seasonings

Lightly brown the meat with the onions in a skillet over medium heat.  Add the spices and Parmesan cheese about half way through the process.  It is important to spice the meat!

Drain the excess fat from the meat and put in the bottom of a 2 quart casserole.  Spread evenly across the bottom.  Spread the selected vegetables over the meat.

Prepare the instant potato mix according to the directions and smooth evenly over the top of the vegetables.  Then dump the shredded cheese over the top.  You should now have 4 layers -- meat and onions with spices, vegetable, potato, and cheese on the top.

Bake at 350 degrees for 25 minutes.

Serves 6 adults.
